Souper Saturday - Italian Sausage Soup

Very easy recipe today. I'm getting a new puppy in minutes! :)

Italian Sausage Soup w/ Tortellini

1 lb. sweet Italian sausage, casings removed
1 c chopped onion
2 cloves garlic, chopped
1 c sliced carrots
½ tablespoon basil
½ tsp oregano
5 c beef broth
½ c water
½ c red wine
4 large tomatoes, peeled, seeded & chopped (I used 1 can stewed tomatoes)
1 8 oz. can tomato sauce
1½ c chopped zucchini
8 oz. tortellini, cooked
3 tablespoons parsley


1. In a Dutch oven, brown sausage. Remove and drain.
2. Sauté onions & garlic in sausage drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, sausage. Bring to a boil. Reduce heat & simmer uncovered for 30 minutes.

2. Stir in zucchini and parsley. Simmer covered for 30 minutes. Add tortellini during the last 10 minutes. Sprinkle w/ Parmesan cheese on top of each serving.

Note - I would almost add another can of broth as I don't think
the recipe makes enough sauce.

Last Souper Saturday Until Fall


As February comes to a close it marks the end of Winter for some of us North Carolinians. Yes, Carolinian is word. Anyway, I thought it would only be fitting that Souper Saturday took a hiatus until next Fall. Not many people eat soup as it gets warmer. Maybe I'll come up with some kind of salad carnival. Sounds like a good time, eh?

So, this Saturday will be the last Souper Saturday until October!

Monday update

  • An update on my daughter's bedding - with help, I found this! It absolutely pays to ask your friends opinions when decorating. Thank you so much for your input. It was helpful for sure!

  • Souper Saturday will be up this weekend. I will actually be gone on a retreat with the women's leadership team from my church. Blessed oh blessed time away with some incredible women.

BUT, I will schedule it so you can post your recipes.

  • The forecast says snow for us! 2-4 inches. So, I need to run to the store before all the milk, eggs, and bread sell out.

Souper Saturday - Chicken Vegetable Soup with Lime and Cilantro



One of my favorites - great for a slimmer start to the New Year!

Chicken Vegetable Soup with Lime and
Cilantro
... and some other things, too.

2 lbs of skinless boneless chicken breast, cut up into 1 inch cubes

8 cups chicken broth (I use low salt, low fat)

3 cups of russet potatoes cut into cubes or shredded or small in size

1 1/2 cups of carrots, peeled, cut into rounds or small in size

1 1/2 tsp. ground coriander

1 - 15 oz. can of Golden hominy
drained and chopped

6 green onions - chopped

1/3 cup Fresh Cilantro, chopped

5 T fresh lime juice

1/2 tsp. cayenne pepper

Salt to taste ( I used sea salt)

Optional - Green Tabasco to taste
and warm corn tortillas. Shredded Cheddar Jack cheese.

Preheat large pot on medium heat

Sprinkle chicken with salt and saute it in the pot with the coriander, cayenne pepper, carrots and potatoes until chicken is turning opaque and brown a bit. I do ADD A BIT of OLIVE OIL here.

Add broth, turn heat up to medium high and bring to boil.

Reduce heat to medium low and simmer until chicken and vegetables are tender, stirring occasionally, about 40 minutes.

Add hominy, green onions, cilantro, and lime juice and simmer for about 5 minutes just to blend the flavors

Add salt, tabasco and cheese to your liking.

Serve with Warm Corn tortillas

Souper Saturday - 7 Can Chili


Today's topic - Chili.

I love love love chili. Especially the leftovers.

Link up to your favorite chili recipe or any other great soup recipe you may have.

I know a few of you are watching each week to see new recipes. How fun! That makes me smile lots. I can't wait to see yours and have been trying at least one a week.

Here is my easy peasy chili - I get many compliments on this and it has actually won 2nd prize at at a church cook-off! Well, actually Hubby made it when it won, but I was there!

7 Can Chili

2 lb. ground beef - cooked and seasoned with S&P - drained
1 10 oz box of frozen corn
1 cup chopped mushrooms (optional)

The 7 cans part...
1 large (28 oz) can tomatoes
1 large (14 oz) can tomato sauce
1 can kidney beans - drain and rinse all beans except baked
1 can black beans
1 can pinto beans
1 can butter beans (yes, indeed)
1 can baked beans - Don't drain these.

Add 2 TBSP of the chili seasoning below -

We add some jalapenos, too - but that is to taste

Add all ingredients to a large stock pot. Heat on medium to medium-high until it comes to a boil. Cover and reduce to low or simmer for at least 2 hours. Longer if you can. It would actually be a great crockpot recipe.


Here is the Chili Seasoning Mix recipe
Makes about 1 1/2 cups - it will last you a long time.

3/4 cup chili powder
2 Tbsp. ground cumin
2 Tbsp. dried oregano
2 Tbsp. dried minced onion
2Tbsp. sugar
2 tsp. dried minced garlic

Souper Saturday - White Turkey Chili



By request, I am planning to host the Souper Saturday Carnival each Saturday through the colder months.

I am not big on rules, but if you want to read more details go HERE.

Basically, link anything that says:
"Soups On! " in your house.
Comfort.
Warmth.
Easy would be good, too. ;)


This week, since we baked a huge turkey and we have so much left over, I am going with the turkey theme.

White Turkey Chili.
It is favorite and one of my MIL's favorites.

Here you go,

White Turkey Chili

  • 2 Cups of turkey breast (you can use ground white turkey breast if you don't have any leftover - just cook it up with the next 3 ingredients and then add remaining ingredients)
  • 1 Tbsp olive oil
  • 1 small onion - chopped
  • 2 -4 oz cans of chopped green chilies
  • 2 -15 oz cans of white cannellini beans(white kidney beans. great northern beans work, too) - drained and rinsed
  • 1 -10 oz box of frozen white corn
  • 2 -15 oz cans of reduced-sodium chicken broth
  • 2 cloves fresh chopped garlic or 1 Tbsp garlic powder
  • 1 tsp cumin
  • 1 tsp white pepper
  • 1 tsp oregano
  • 1 tsp salt
Additions after soup is cooked:
  • Chopped fresh Cilantro to taste
  • Hot sauce to taste
  • White cheddar or Monterey Jack cheese to taste
  • Sour Cream
  • Tortilla chips
You will need at least a 4 quart stock pot.
Heat turkey with onion and chilies in the olive oil until onion is turning clear.
Add remaining ingredients.
Bring to boil.
Reduce to simmer for at least 30 minutes. I let it simmer longer to infuse the flavors better - about 2 hours.

Add any of the above additions to jazz up the flavor. Especially the cilantro. Serve with the tortilla chips or over cooked rice even. Yum!

Souper Saturday - Texas Stew

I love making soup. It is such a great meal in the Fall and Winter and my family loves it!

My plan is to share some of my favorite recipes with you and hope you will play along and share some of yours with me.

So, here it is - the easiest stew you might ever make!

Texas Stew (From Easy Weeknight Favorites - Southern Living)

8 servings

2 lbs beef cut into 1 inch pieces
1 (14 1/2 oz.) can of Mexican style stewed tomatoes - undrained
( I use regular stewed tomatoes so it is not so spicy)
1 can condensed beef broth - undiluted
1 (8 oz.) jar of mild to medium salsa picante sauce
1 (10 oz.) package of frozen corn
2 carrots, scraped and sliced
1 medium onion - chopped
2 garlic cloves - minced
1 tsp. ground cumin
1/2 t. salt
*******************
1/3 Cup of water
1/4 Cup of all-purpose flour

Saute meat until it browns. Then combine the next 10 ingredients in a 4-5 quart pot or crock pot. Cover and cook on high until starts to boil - reduce to low for up to 10 hours (note to Saladmaster customers: Saute your meat, add next 10 ingredients, Cover, heat to medium until the vapo-valve clicks. Reduce to low for about 2-4 hours. You will save yourself lots of time, but you can also leave it cooking all day.)

Combine water and flour - bring soup back to a boil and stir into soup until thickened. Serve.

Souper Saturday


Okay, here's the deal with Souper Saturday.

I love soup. Most people love soup.
I don't have a lot of great soup recipes and found that you don't either.

So, I thought we could share.

Each Saturday during the colder months (or until this is not any fun anymore) I will host a carnival with a soup recipe and Mr. Linky for you to join in.
